Hearty Chicken Tortilla Soup

I don’t mean to toot my own horn, but you’ll never find my version of tortilla soup in a restaurant. It’s just too good. For starters, it’s hearty, full of vegetables, and there’s homemade stamped all over the bowl.

The first tortilla soup I paid for ($5 a cup) was watery and was skimping on EVERYTHING. For about $18, I can feed six people a delicious and filling soup. Plus, it’s pretty easy. All the work is done in about 15 minutes, and then just let the pot simmer.

Ingredients for 6:

  • 2 28-ounce cans of whole tomatoes
  • 2 14-ounce cans of chicken broth, plus ½ cup for chicken
  • 1 chicken breast, butterflied
  • 2 teaspoon of oil
  • 1 onion, chopped
  • 4 to 5 garlic cloves, minced
  • 2 fresh serranos, minced
  • 1 4-ounce can of diced jalapenos
  • 1 teaspoon of cumin
  • 1 teaspoon of salt, plus more for the chicken
  • 1 teaspoon of pepper, plus more for the chicken
  • 1 cup of frozen sweet corn
  • 1 15-ounce can of black beans

Toppings:

  • Fried tortilla strips
  • Avocado slices
  • Cilantro leaves
  • Shredded Mexican cheese
  • Lime wedge

In a pan with a lid, heat 1 teaspoon of oil. Season the chicken on both sides with salt and pepper. Cook on one side for 2 minutes, flip and cook for another 2 minutes, and then add ½ cup of chicken stock and cover. Cook for another 4 to 5 minutes. Remove and allow to cool before shredding.

In a large pot, heat 1 teaspoon of oil. Cook the serranos, onions, and garlic for about 5 minutes. Then add the two cans of tomatoes. With a wooden spoon, break up the tomatoes. Then add the diced jalapenos, 2 cans of chicken stock, cumin, salt, and pepper. Bring to a boil.

Shred the chicken into small pieces.

Add the chicken, corn, and black beans to the boiling soup. Then lower heat to a simmer. Cook for at least an hour. Taste 30 minutes into the simmer to check if any extra seasoning is necessary.

Top the soup with the above toppings. I also serve the soup with Serrano cornbread muffins. Check tomorrow for that recipe because they go perfect together.
