Black Bean and Corn Salsa

This salsa is ALWAYS a hit in the house. It’s easy to make, delicious to eat, and beautiful to look at.

I would recommend doubling the recipe if you’re looking to feed more than four or five people, which shouldn’t cost you too much since it cost about four bucks to make enough for four.

Ingredients for 4:

  • 1 15-ounce can of black beans, rinsed
  • 1 14-ounce can of diced tomatoes with lime juice and cilantro
  • 1 cup frozen sweet corn
  • ½ red onion, diced
  • ½ cup cilantro, chopped
  • 1 serrano, chopped
  • 1 lime, juiced
  • Cumin, salt, and pepper

Combine all the ingredients and then refrigerate for at least one hour. Serve with tortilla chips. They especially go well with freshly fried flour tortillas.
