Shrimp Scampi


Now THIS is probably the easiest recipe on here. Butter, lemons, shrimp, pasta, and garlic are all you need for this delicious dinner.

The only thing I had to buy fresh were the shrimp, and that was only half a pound and cost less than 2 bucks. But let’s say you had to buy all the ingredients for this seemingly fancy meal for two. The total costs would be less than $5.

Ingredients for two:

  • ½ pound shrimp, peeled
  • 2 sticks (1 cup) of butter
  • ½ pound of spaghetti
  • 2 lemons, zested and juiced
  • 2 garlic cloves, minced
  • Garlic salt and pepper
  • Sprinkle of parmesan cheese (optional)

Cook the pasta according to the directions and then drain.

In a large pan, heat 2 tablespoons of butter over medium heat. Once the pasta hits the boiling water, throw the garlic into the butter. (Both components should be done at the same time).

Let the garlic lightly brown for a few minutes, then add the rest of the butter and allow that to melt. Then throw in the lemon juice and zest.

Season the shrimp with garlic salt and pepper and toss into the pan. Cook for about 2 minutes on each side. Turn the heat off and toss in the pasta. Allow the pasta and sauce to sit for at least 5 minutes before serving. Sprinkle with some cheese if desired.
