Mango Salsa

There’s really nothing more refreshing than homemade salsa, especially a fruit salsa.

I made this delicious dip on a whim one Saturday afternoon when there was nothing else to snack on. I had a ripe mango, half a green bell pepper, a quarter of a tomato, a lime and some cilantro in the fridge and I didn’t want them to go to waste. The cost of buying the goods was no more than $5. I altered the written recipe, so you wouldn’t have to use the weird portions that I was dealing with.

Ingredients for 4:

  • 1 sweet, ripe mango, diced
  • 1 medium tomato, diced
  • 1 small green bell pepper, diced
  • ¼ cup cilantro, chopped
  • 1 lime, juiced
  • Salt and cayenne

In a small bowl, combine all the ingredients, sprinkling just a bit of cayenne and enough salt to taste. Refrigerate for at least 20 minutes to allow the flavors to meld.

I served the salsa with Salsa Verde Doritos since that’s all I had on hand, but of course any kind of tortilla chips will work perfectly.
