Lemony Chicken-Spinach Ziti

So this summer, I am especially loving lemons and frozen spinach. Why frozen spinach, you ask? Well, it’s cheaper and it’s just as good if not BETTER than fresh spinach. Frozen spinach was once fresh spinach, but once picked it was flash frozen to keep its peak nutrients and delicious. So that’s why I love frozen spinach. And the lemons are a given.

This meal is especially easy, since the sauce can be made in a large bowl, which I’m a huge fan of. Check out my Lemon-Ricotta sauce or Carbonara if you would like to see old “sauce in a bowl” favorites.

Other than lemons and spinach, I used chicken, ziti, chicken stock, and parmesan cheese. Total cost was about $8. I also used two lemons, just because I love that lemony flavor, but if you just a hint of citrus then cut back a lemon.

Ingredients for 2:

  • 1 chicken breast, butterflied
  • ¼ cup of chicken stock
  • ½ pound of ziti
  • 1 10-ounce package frozen chopped spinach
  • 2 lemons, zested and juiced
  • ¼ cup of parmesan cheese, more for topping
  • 1 tablespoon plus 1 teaspoon olive oil
  • Garlic salt and pepper

Cook the pasta according to the directions. Save at least ½ cup of the pasta water before draining.

While the pasta is cooking, heat a frying pan (that has a lid) on medium-high heat with 1 teaspoon of olive oil.

Season both sides of chicken with garlic salt and pepper. Cook on one side for 2 minutes, then the other for 2 minutes, then add chicken stock, cover, and cook for another 4 minutes. Remove and allow to rest before cutting into strips.

While chicken is cooking, combine the spinach, lemon juice, zest, cheese, rest of the oil, garlic salt, and pepper into a large bowl. Mix well.

Cut the chicken into strips.

After pasta is drained, immediately add to bowl, along with the chicken. Add any or all of the reserved pasta water to the bowl if necessary. I didn’t have to add any pasta water, but you may need to if it seems too dry.

Top with cheese if desired.
