Roasted Salmon with Avocado Sauce and Tomato-Avocado Salad

I LOVE salmon. I try to have it at least once a week, and to be honest, I could have it roasted with just salt and pepper, but this recipe is worth the extra “trouble.”

A quarter pound fillet is enough for me, especially since I usually pair it was some sort of vegetable and grain. Here my salmon fillet shares the plate with a tomato and avocado salad and a house favorite, cilantro-lime rice. The total costs will run you about $14.

Ingredients for 2:

  • 2 ¼-pound fillets of salmon
  • 2 ½ tablespoon of olive oil
  • ½ cup cherry or grape tomatoes, cut in half
  • ¾ cup cilantro, chopped
  • 1 ripe avocado, diced
  • ¼ cup milk
  • 2 lime, juiced
  • ½ small red onion, sliced thin
  • Cayenne, salt and pepper

In a medium-size bowl, combine the tomatoes, half the diced avocado, the juice of 1 lime, ¼ cup cilantro, and red onions. Season with salt and pepper and refrigerate.

Preheat the oven to 350 degrees.

Heat 1 tablespoon olive oil over medium-high heat in a pan. Season the salmon with cayenne, salt, and pepper. Cook for 4 minutes on the non-skin side down. Then two minutes on the other. Then transfer to the oven to cook for another 15 minutes.

While the salmon is cooking, pulse or blend the rest of the avocado and cilantro a few times and then add the juice of 1 lime, the rest of the olive oil, and the milk. Process or blend until smooth, add more milk if needed. Season with salt and pepper. Leave at room temperature and spread over the salmon.
