Pan-Grilled Lamb Loin Chops with Cherry Tomatoes

This meal may be a BIT of a splurge but I bet you it’s A LOT cheaper than you’ll ever get in a restaurant.

The meal itself is SUPER easy and will set you back about $16 for a dinner for two. It was definitely worth the money for me, and I see myself having this at least once a month.

I marinate the meat for a few hours in the fridge and just throw it onto a grill pan. The cooking process is easy, the cleanup is quick, and the end result is simply beautiful and delicious.

Ingredients for 2:

  • 4 lamb loin chops, about 5 ounces each
  • ½ cup of cherry or grape tomatoes
  • 2 teaspoons Italian seasoning
  • Salt, and pepper
  • 3 tablespoons of olive oil
  • 3 cloves of garlic, minced

In a small baking dish, combine the olive oil, Italian seasoning, garlic, salt and pepper. Mix well and then add the loin chops. Massage the meat with the marinade, making sure every inch is covered, then cover the dish and refrigerate for at least an hour. Flip the loin chops over, cover, and refrigerate for another hour.

30 minutes before cooking, allow the chops to come to room temperature.

Heat a grill pan to medium-high heat. Grill the chops for 6 minutes on one side and then flip. Then add the tomatoes to the same pan, scattering them between the chops. Cook for another 6 minutes. Remove the chops to a plate and tent with a foil. Allow for the chops to rest for 5 minutes.

Turn off the heat on the tomatoes and season with salt and pepper.
