Greek Lamb Sliders with Feta Cheese and Cherry Tomatoes

This week’s sliders were Greek-style lamb and they were probably my most tasteful yet. I’ve been dying to make lamb sliders for quite a while now, and I’m glad I finally got the chance.

I grabbed half a pound of beautiful ground lamb, Hawaiian rolls, mint leaves, and a chunk of feta cheese from the store for about $10. I already had the cherry tomatoes and a few pantry staples at home already.

The prep for these juicy sliders were super easy, and they came out tasty and juicy, exactly what I was hoping for. I served a simple salad with Feta cheese crumbles and red wine vinaigrette on the side.

Ingredients for two:

  • ½ pound ground lamb
  • ¼ cup fresh mint, chopped
  • 2 garlic cloves, minced
  • Salt and pepper
  • 1 egg
  • ¼ cup fresh breadcrumbs
  • 1 tablespoon olive oil
  • 8 cherry tomatoes
  • 1 4-ounce log of goat cheese, crumbled
  • 6 rolls

In a bowl, combine the lamb, mint, garlic, salt, pepper, egg, and breadcrumbs. Form into 6 patties, cover, and refrigerate for at least an hour.

Take the patties out 10 minutes before cooking.

Heat a grill pan to medium-high. Add the olive oil. Add the patties, but do not crowd. Scatter the tomatoes around the patties. Cook both the patties and tomatoes for 4 to 5 minutes on each side.

Warm the rolls if desired. Top the patties with the grilled tomatoes and cheese crumbles. Serve immediately.
