Bacon-Cheddar Bison Burger


This is the first time I’ve ever cooked bison, and although it wasn’t cooked perfectly, it was still pretty tasty and hit the spot.

I was aiming for medium-rare, but they ended up well-done. But hey, that happens. Now I know to take it off the grill at 4 minutes on each side instead of 6.

I wanted to make it really simple and let the bison flavor shine through, which it did, despite piling on grilled onions, cheddar, and bacon. That and some simple fries were all I needed.

Ingredients for 2:

  • ½ pound ground bison
  • 2 hamburger buns, I used Hawaiian rolls
  • ¼ small onion, sliced into rings
  • 2 slices of cheddar
  • 3 slices of bacon
  • Salt and pepper
  • 1 teaspoon olive oil

In a bowl, combine the ground bison, salt, and pepper. Mix until just combined and form into 2 patties. Salt and pepper each side, cover, and refrigerate until 20 minutes before grilling.

Fry the bacon. Pour off all but a teaspoon or two of the bacon grease and toast the buns. Set the bacon and buns aside.

Heat a grill pan to medium-high heat. Add olive oil. Add the patties and onion slices. Cook for 4 minutes on each side. Add cheese to the patties and top with onions and bacon.
