Salmon with Creamy Mushroom-Feta Cheese Orzo

The orzo definitely stole the show here. The flavors and textures were better than I expected.

The salmon was simply baked in parchment paper, while the orzo is prepared. The orzo was so good that I can see myself just eating a whole bowl of just itself for dinner. The total cost set me back about $18 for two.

Ingredients for two:

  • 2 quarter-pound salmon fillets
  • 1 cup orzo
  • ½ cup half and half
  • ¼ cup feta cheese crumbles
  • ½ pound cremini mushrooms, rinsed and slice
  • 1 tablespoon olive oil
  • Salt and pepper

Preheat oven to 350 degrees. Season salmon on both sides with salt and pepper. Prepare a parchment pouch (en papillote) for the salmon and bake for 18 minutes.

Cook the orzo according to the directions, drain, and set aside.

In a pan on medium-high heat, add the olive oil and sauté the mushrooms. Add the cooked orzo and half-and-half. Reduce the heat to medium and add the feta. Allow the cheese to melt and sauce to thicken, may take 2 to 4 minutes. Season with pepper and little salt.

Serve the salmon and orzo together and enjoy.
