Spinach-Feta Omelet

I love eggs. I love ‘em scrambled, fried, over easy, boiled, and of course, omeletted!

I must admit that here’s another dish that I didn’t actually cook myself. My lovely boyfriend made this delicious omelet for me.

We finally decided to visit a local gourmet cheese shop near our place, and grabbed some fresh feta cheese. We knew feta and spinach would go beautifully together in any situation, so stuffing it into an omelet wouldn’t end up a disappointment.

The cost set us back about $6 for a ½ cup of feta, but it was worth it. The rest of the ingredients we already had in the fridge.

Ingredients for 1:

  • 3 eggs
  • 1 tablespoon milk
  • ½ tablespoon butter
  • Salt and pepper
  • ½ cup sliced white onion
  • 2 cups fresh baby spinach
  • ¼ cup crumbled feta cheese
  • Olive oil

In a small pan, add some olive oil and sauté the onions until soft. Then add the spinach. Season with salt and pepper and set aside.

In a large, non-stick pan, add butter and allow to melt on medium heat.

In a small bowl, beat together the eggs, milk, salt, and pepper.

Add the eggs to the pan and cook until the bottom is almost set. Using a spatula, lift the sides and allow any uncooked portions to run to the bottom.

Spread the spinach-onion mixture onto one half and top with feta crumbles, then fold the other half over the filling. Allow to cook a bit longer to warm through the filling. Then transfer to a plate.

Serve immediately.
