Spicy-Garlicky Broccoli and Carrots

I know what you’re asking. “Uh, just broccoli and carrots?” Well, yes but no. I know you’ve had broccoli and carrots together numerous times, but here they are again with a nice kick.

I add a few shakes of red pepper flakes into the pan for some heat, but use your best discretion with that. I served the vegetables with a lightly seasoned piece of salmon, so I wanted some extra flavor with my veggies.

The total cost for this recipe was about $3. Not bad.

Ingredients for 2, as side dishes:

  • 2 cups of broccoli florets
  • 2 carrots, cut into 2-inch long, thick strips
  • 4 garlic cloves, minced
  • 1 lemon, juiced
  • Salt and pepper
  • Red pepper flakes
  • Olive oil

Bring a large saucepan to a boil.

Boil the carrots for 3 minutes and then add the broccoli for another minute. Drain and set aside.

In a large frying pan, add olive oil on medium-high heat. Sauté the garlic and red pepper flakes until fragrant. Then add the boiled vegetables. Season well with salt and pepper.

Remove from heat and toss with lemon juice.

Serve immediately and enjoy.

  1. I make a version of this dish at least once a week! Sometimes I add snap peas or cauliflower, but mmmmmmmmm, so good!
