Pepperoni Pizza Bites

Ladies and gentlemen, allow me to introduce to you the perfect snack… pizza bites!

I made these one Saturday afternoon and they were immediately gobbled up by my boyfriend and I. They were perfect for an afternoon snack, very flavorful and filling.

They took up quite a bit of time, but they were definitely worth it. And they only set me back about $8. That’s a pretty good deal in my book.

Ingredients for 20 pieces:
Pizza Dough :

  • ½ cup warm water (110 degrees)
  • 1 envelope instant yeast
  • 1 ¼ cup water, room temperature
  • 2 tablespoons extra-virgin olive oil, plus more for greasing
  • 4 cups bread flour
  • 1 ½ teaspoon salt


  • 1 – 2 cups shredded mozzarella
  • ¼ pound sandwich pepperoni, quartered


  • Olive oil for brushing
  • Italian seasoning
  • Grated Parmesan cheese

In a liquid measure cup, add the warm water and sprinkle in the yeast. Allow to dissolve for 5 minutes, and then add the rest of the water and oil. Stir well.

In a large mixing bowl, add the flour and salt. Combine on slow speed with a paddle attachment. Slowly add wet ingredients until a sticky mass forms. Switch to a dough hook and knead until elastic, or 5 minutes.

Form the dough in a ball and place into a large, greased bowl. Cover with saran wrap and allow to rise for 1 ½ hours.

Punch the dough and divide into two equal pieces. Cover one piece in a damp cloth to use immediately. Saran wrap the other piece and freeze for future use.

Preheat the oven to 400 degrees. Grease a 9-inch cake pan.

Tear off walnut-size hunks of the dough and flatten out. Put 4 to 6 pieces of pepperoni slices in the center and a tablespoon of cheese on top of pepperoni. Bring the edges of the dough into the center and seal the edges together. Place the pieces seam down onto the cake pan. I started in the center and worked my way out.

Brush the tops with olive oil and sprinkle with Italian seasoning and Parmesan cheese.

Allow to cool for 5 minutes before serving. I served them with tomato sauce, but they were delicious as is.
