Spicy Couscous with Green Onions and Peanuts

So at 1:02 p.m. hunger struck. And at 1:09 p.m., lunch was served. True story.

This meal literally took minutes to make, and not only is it quick to make, but it’s also satisfying and filling. It started out as just buttery couscous, but then I ran into some peanuts in the pantry. And then I remembered about some green onions hanging out in my crisper. And the last touch was some hot sauce and sesame oil. So easy and so delicious. Oh and it cost hardly anything.

This recipe is definitely more inspirational than instructional. Use whatever you have on hand to make a quick meal when you’re in a bind.

Ingredients for 1:

  • ½ cup water
  • Pinch of Salt
  • ½ cup couscous
  • 2 tablespoons butter
  • ¼ cup green onions
  • ¼ cup crushed peanuts
  • Sesame oil
  • Sriracha
  • Pepper

In a small saucepan, add water, salt, and butter. Bring to a boil and stir in couscous. Cover and remove from heat.

After 5 minutes, fluff with a fork and add in remaining ingredients. Serve immediately and enjoy.
