Cilantro Pesto Pasta

Mmmm, so yummy and so easy.

I made this super quick lunch for my boyfriend and I from leftover-ed pesto and dried pasta hanging out in the pantry. It came out delicious. And for me, it only took 14 minutes. And the cost from scratch set me back about $8. Not bad, not bad at all.

Here I used grated Manchego cheese since I had some lying around in the fridge, but you could use Parmesan cheese if you’ve got that on hand.

Ingredients for 2:

  • 1/3 cup pine nuts
  • 2 large garlic cloves
  • 1 bunch cilantro, with stems cut off
  • ¼ to 1/3 cup olive oil
  • 2 tablespoons grated Manchego cheese
  • Salt
  • 2 to 3 cups dried pasta
  • 2 tablespoons butter

Cook pasta according to directions. Drain and return back to pot with the butter.

While the pasta is cooking, start the pesto: In a food processor, pulse the garlic and pine nuts for a few seconds.

Add the cilantro and pulse a few more times.

Drizzle the oil and pulse until desired consistency.

Then add cheese and salt and pulse again for a few seconds.

Add to the pasta and mix well. Serve immediately. Grate more cheese onto pasta if desired.
