What’s for Dinner this Week?


I’m on a tighter budget than usual, so for me, that translates into a few more “Italian meals” during the week. And I don’t mind that one bit.

Sunday (Today): Sausage & Peppers with Focaccia Bread*
Monday: Meatball Subs
Tuesday: Shrimp Po’ Boys with Cole Slaw
Wednesday: Shrimp Scampi
Thursday: Mexican Pizza*
Friday: Stuffed Peppers
Saturday:
Creamy Polenta with Portobellos and Tomatoes*

Dessert: Profiteroles* and Vegan Fruity Cupcakes*

I’m trying five new recipes, and I’m super excited, especially about the desserts. I have been craving profiteroles for months now after having them at Perla’s last November. Yum.

This week I’m saving by:

  • buying Italian sausage links, which are cheaper than the packaged ground Italian sausage (removing the casings is SUPER easy)
  • making a extra large batch of tomato sauce and divvying it between three dishes
  • using leftover-ed frozen fruits to make the cupcakes
  • buying a pound of shrimp on sale and dividing it in half
