What’s for Dinner this Week?

I’m making an old favorite this week, my original pork burgers with lots of cilantro, chopped bell pepper, and Serrano peppers. I haven’t made them in almost a year, but i’m sure they’ll be a hit. I’m also making two new recipes this week that I’m hoping are worthwhile. We’ll see!

Sunday (Today): Italian Sausage and Mozzarella Calzones
Monday: Smoked Sausage Sandwiches with Caesar Salad*
Tuesday: Pork Egg Rolls with Fried Rice
Wednesday: Roast Chicken with Root Vegetables
Thursday: Pork Burgers*
Friday: Pork Chops with Pan Sauce and Vegetable Medley
Saturday: Chicken Tetrazzini*

This week I’m saving by:

  • Using pork chops frozen from a 4-pack I bought last week
  • Using leftovers from the roasted chicken to make the tetrazzini
  • Dividing the pork between the egg rolls and the burgers
  • Dividing vegetables for the egg rolls, roasted root vegetables, and the medley
