Avocado Spring Salad with Mustard Vinaigrette

I threw this salad together on a whim. I wanted to use all the fresh ingredients I had on hand, and this tasty salad is what I came up with.

It’s hard to put a price on this salad since I only used leftover-ed ingredients to assemble it. I love when these situations come up in the kitchen.

Ingredients for 4:

  • 1 10-ounce bag of spinach-spring salad mix
  • 1 avocado, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup toasted slivered almonds
  • 2 tablespoons dijon mustard
  • 3 tablespoons red wine vinegar
  • Salt and pepper
  • Olive oil
  • 1 teaspoon sugar

In a large bowl, add the salad mix, red onion, avocado, and almonds.

In a small bowl or measuring cup, whisk together the vinegar and mustard. Add the olive oil in a steady stream and whisk until desired consistency. Season with salt, pepper, and sugar.

Dress the salad right before serving.
