Italian Sausage Bolognese

My boyfriend made this lovely dinner for me, and I couldn’t have asked for a better meal to end a long work day.

There’s a bit of time and effort involved, but it’s worth it. And the cost for this delicious dinner for two set  me back about $8, plus a few things from my pantry. I look forward to making it myself reallllly soon!

Ingredients for 2:

  • ½ pound ground hot Italian sausage
  • ¼ cup red wine
  • 4 large garlic cloves, minced
  • ½ white onion, minced
  • 1 carrot, minced
  • 2 tablespoons tomato paste
  • ¼ cup milk
  • ¼ teaspoon ground nutmeg
  • 1 bay leaf
  • 1 14-ounce can of diced tomatoes
  • ¼ cup chicken broth
  • Olive oil
  • Salt and pepper
  • Italian seasoning
  • ½ pound thin spaghetti
  • Grated Parmesan
  • Fresh basil leaves

Add olive oil to a large pan on medium heat. Add the minced vegetables and cook for a few minutes and then add sausage. Thoroughly cook meat before adding the wine.

Stir and allow for the wine to absorb for a few minutes before adding the rest of the ingredients. Allow to simmer partially covered, for 30 minutes.

Taste for seasonings and allow sauce to thicken for another 10 to 15 minutes.

Cook pasta according to directions. Drain and add to the sauce. Mix well and serve topped with cheese and basil.
