What’s for Dinner this Week?

Just one new recipe this week, and it’s gnocchi! My boyfriend and I LOVE gnocchi but we’ve never dared to make it ourselves before. Hopefully, it’ll show up here very soon.

Sunday (Today): Meatballs and Spaghetti with Garlic Knots (for 6)
Monday: Baked Ziti with Italian Salad
Tuesday:  Grilled Shrimp and Avocado Salad
Wednesday:  Bratwurst
Thursday: Chipotle Chicken Taco with Black Bean-Corn Salsa
Friday: Spicy Chicken Enchiladas with Rice
Saturday: Gnocchi in a Brown Butter Sauce with Greek Salad

Dessert: Profiteroles, Blueberry Muffins, and Lemon Muffins

This week I’m saving by:

  • buying a head of Romaine lettuce to split between the salad recipes, instead of buying “salad in a bag”
  • using leftover-ed chicken from the tacos to make the enchiladas
  • the baked ziti was actually made last week when I divided and froze half a batch of it
